Shepard's Apple Pie Serves 6 1 lb sausage meat (approx. 12 sausages) 1 cup sliced apples 6 strips cooked, drained bacon 3 sliced tomatoes 3 cups creamy mashed potatoes 1/2 cup grated cheese (mozzarella is best) 1/4 cup butter or margarine Line a 8 cup casserole dish with the sausage meat. Layer with apple slices, bacon strips and tomato slices. Sprinkle tomatoes with half the grated cheese. Top with mashed potatoes and sprinkle with remaining cheese. Dot with a little butter and bread crumbs, if desired. Bake at 400 degrees F for 45 minutes or until golden brown. Garnish with chopped parley or spring onions.
