| Ham and Sweet Potato Bake |  Serves 4
|  | 4 cups |  | cooked mashed sweet potatoes approx. |  | 1/2 cup |  | thick apple sauce |  | 1 tsp. |  | salt |  | 1/2 tsp. |  | allspice |  | 1 tbsp. |  | brown sugar |  | 1/3 cup |  | butter or margarine |  | 2 cups (1 lb) |  | diced, cooked ham |  | 1 |  | large onion, chopped |  | 1 |  | large apple, sliced | To hot mashed potato, add salt, allspice, sugar, half the butter, and applesauce; mix well and set aside. Saute onion in second half of butter until transparent; add apple slices and saute 2 minutes; mix in ham. Into a greased 6 cups casserole dish, place ham mixture, pour potato mixture over top. Sprinkle with bread crumbs and dot with butter. Bake for 45 minutes at 375 degrees F. Sprinkle with chopped parsley or spring onions, serve with a salad. |  | |
